This Creamy Cashew Sun-dried Tomato Pasta was HEAVEN. I’ve been working a lot on slowing down and enjoying the moment. Adding in pockets of rest and mindful movement is really helping me, especially when I get to cook up delicious meals like this one.

The Recipe

Ingredients

Cashew Sauce:
50g cashews, soaked overnight
1 tsp of mustard
100g sun-dried tomatoes
2 tbsp of nutritional yeast
2 tbsp of coconut cream

100g brown rice pasta

Directions

Blend the Ingredients of the cashew sauce.

Cook the pasta as per instructions.

Mix together with some pepper, chilli flakes and optional extra sun-dried tomatoes.

Eat along side a big plate of greens to up those plants
