Vegan Creamy Mushroom Skillet

I can’t get enough of cashew cheese it’s just so good. This Vegan Creamy Mushroom Skillet is easy to make and this delicious sauce is perfect on pasta too.

It only takes 20 minutes, a super dish for the whole family!!

Did you know.. Mushrooms have a good amount of fibre and over a dozen minerals and vitamins in them!

The Recipe

Ingredients

300g button mushrooms
1 tbsp of olive oil
60G cashews, soaked for 4 hours
1/2 squash steamed, chopped up

4 tbsp of nutritional yeast
1 tsp of tamari
1 tsp of garlic granules
200g coconut cream

Directions

Place the mushrooms and oil in a pan; fry for 5 mins.

While this is trying blend the rest of the ingredients together.

Pour over the mushrooms and simmer for 10 mins. Serve with pasta (or rice) or sourdough bread.
