This Butterbean, Kale & Coconut Stew is the ultimate simple and nourishing dinner. It uses cupboard staples plus whatever veggies you have on hand for the most nourishing and comforting meal that honestly tastes even better as leftovers the next day.

The Recipe

Ingredients

1 tin butter beans, drained
75g kale, roughly chopped
200g cherry tomatoes
1 Tbsp Olive Oil
3 cloves garlic, sliced
½ can of coconut milk
Salt and peppe

Directions

In a large pot fry the garlic, tomatoes, beans and kale for 5 minutes

Add in the coconut milk and simmer for 15 minutes

Season to taste and serve
