Creamy Cashew Pasta Bake

This Creamy Cashew Pasta Bake is the ultimate simple, cosy comfort food. This recipe is so quick and easy to make and always goes down so well. It works amazingly with whatever veggies you have on hand and is a great dish for clearing out the fridge and reducing food waste.

The Recipe

Ingredients

250g Pasta of choice (precooked, I used spelt)
75g cashews soaked overnight or for 15 minutes in boiling water
1 red pepper
1 green pepper
150g mushrooms
1 Spring onion
2 cloves garlic
2 tbsp nutritional yeast
1 tsp dijon mustard
Optional: 2 tbsp cashew cheese
Salt and pepper to taste

Directions

Preheat the oven to 180C
Cook the pasta according to package directions
Blend the cashews, mustard, garlic and nutritional yeast with water, add more liquid and seasoning until it is the desired consistency
Slice up the peppers, mushrooms and spring onions and toss with the pasta in the cashew sauce
Bake at 180C for 25 minutes, take out and sprinkle with the cashew cheese and broil for 5 more minutes
