Miso Salmon & Buckwheat Noodles

Fancy a healthy, quick-fix dinner?

My miso salmon & buckwheat noodles has become a regular at home. I usually don’t add the miso to Shays plate but he loves eating buckwheat noodles and for me they are so easy to digest. Honestly, give this recipe a go, it’s so TASTY.

The Recipe

Ingredients

 2 salmon fillets

1 pack of buckwheat noodles

1/4 red cabbage

1 cucumber

1 tbsp of miso paste

1/2 lemon

2 tbsp of sesame oil

1 tbsp of grated ginger

 

to serve:

chilli flakes

sesame seeds

Directions

Preheat the oven to 200 C and start then start to whisk the miso, sesame oil, lemon juice and ginger together.
Brush 1/2 the dressing over the salmon, bake in the oven for 10 mins.
Shave the cabbage with a mandolin or sharp knife. Mix with the rest of the dressing.
Rinse the buckwheat noodles, cook as per pack instruction. Rinse after. Slice the cucumber into sticks.
Serve together with sesame seeds and chilli flakes.
