Lentil, Carrot & Tomato Stew

This lentil, carrot & tomato stew is an absolute family favourite. A tasty and comforting dish using cupboard essentials and on the table within 45 minutes. With tons of protein from the lentils and added nutrients from the veggies this is an awesome meal for the whole family. Enjoy! Xx

The Recipe

Ingredients

1tbsp olive oil

1 onion, finely chopped

1tsp of oregano

1tsp of smoked paprika

2 crushed garlic cloves

1 carrot

1 courgette

1 can of passata

300ml water

100g black lentils

1tbsp of balsamic vinegar

 

optional toppings:

avocado

yogurt

chilli flakes

Directions

To begin, finely chop your onion and add to a frying pan with the olive oil

While the onion browns for around 5 minutes, chop the carrot and courgette into quarters and then 1cm thick slices

Add the oregano, paprika and garlic to the onion and stir

Then, add in the lentils, carrot and courgette and stir for 30 seconds

Pour in the water and tomato passata

Simmer for 35 minutes

Once ready add in the balsamic vinegar and season to taste

Serve with whichever toppings you want. Enjoy!
