Creamy Avocado & Roasted Veg Pitta! I grew up eating pittas all the time, especially if hummus was involved. Never did I think of using them as a layered sort of pizza base and wow, it really worked! I layered mine with a creamy avocado sauce and roasted veg. I had one for lunch and I’m leaving the rest in the fridge for when I need a quick snack or a takeaway lunch. Enjoy! X

The Recipe

Ingredients

Avocado cream:
1 avocado
1/2 lime, juiced
1 spring onion
1 pinch of chilli flakes
100g of yogurt
Salt and pepper

Roasted veg:
1/2 squash, cubed
1 Cauliflower, broken into florets
2 tbsp of olive oil
Salt and pepper

Black beans:
1 can of black beans
1 tsp of cumin
1/2 tsp or smoked paprika
1 tsp of olive oil
Salt and pepper

Yogurt dressing:
100g of yogurt
1/2 lime
Salt and pepp

Directions

Preheat the oven to 200C. Mix the roast veg ingredients together and roast in the oven on a roasting tray for 40 mins.

To make the black beans. Heat the oil in a pan add the beans, spices and a generous amount of salt. Fry for 10 mins.

Blend the avocado cream Ingredients. In another bowl mix the yogurt dressing.

Grab a pittas, spread over the avocado top with the veg and beans and drizzle over the yogurt dressing.
