Simple Salmon Fish Cakes

The perfect way to use up those unused new potatoes that have almost spoiled!

This has quickly become speedy addition to our weekly meals. I’ve been loving these sandwiched between some whole grain buns at our family get togethers or topped on a lovely salad when I’m in a rush.

The Recipe

Ingredients

2 fillets of salmon

200g of new potatoes, boiled

2 tbsp of finely chopped dil

2 spring onions finely chopped

1/2 lemon zest

1/2 courgette, grated

40g Sesame seeds 

Olive oil

Salt and pepper

Directions

Preheat the oven to 200C.

Boil the potatoes for 15 mins.

Roast the salmon for 10 mins.

In a bowl mash the potatoes then flake the salmon mix together with the dill, lemon zest, grated courgette and spring onion.

Roll into burgers and into the sesame seeds then pop on a lined tray.

Repeat with the rest of the mixture – it should make 6.

Roast for 15 mins then serve with the steamed asparagus.
