Hummus Pasta, Olive & Spinach Lunch Bowl

Another great lunch recipe when you are strapped for time is pasta, if you are wanting to keep it protein packed why not try adding in hummus. This one might be controversial but I love it, it is super filling and satisfying. I often have some hummus left in the back of the fridge so I love to use it in my pasta dishes.

The Recipe

Ingredients

100g of pasta

100g of broccoli florets 

50g of spinach leaves

75g of olives

20g of pumpkin seeds

1 tbsp of olive oil

1/2 lemon juiced

salt and pepper

chilli flakes

4 tbsp of hummus

Directions

Boil the water, add the pasta and cook as per the pack instructions. Add the broccoli to the water for the last 4 minutes. 

Drain the pasta and broccoli and add back to the pot you boiled it in, add the spinach and allow to wilt then add the rest of the ingredients, stir well and dig in!
