Breakfast Tacos, Pickled Red Onion, Scrambled Eggs & Spiced Chickpeas

Starting the day off right with this delicious breakfast taco! Scrambled eggs, spiced chickpeas, pickled red onion, and sliced avocado all wrapped up in one tasty package.

This breakfast taco is loaded with protein from the scrambled eggs and spiced chickpeas, which will help keep you feeling full and energised throughout the morning. The eggs marry perfectly with the tangy pickled red onions and the creamy sliced avocado adds a burst of flavour and is full of healthy fats.

The Recipe

Ingredients

1 avocado

1 tin of chickpeas

2 eggs

A tsp of paprika (add more for extra spice)

1 red onion

A glug of apple cider vinegar

Sprinkle of chilli flakes

1sp of salt

A handful of rocket

A packet of tortillas

Directions

Chop up the red onion and soak it in apple cider vinegar, salt, and chilli flakes

Whilst the onions are marinating, add the chickpeas and paprika to a frying pan and cook until slightly crisp

Next crack two eggs into a pan and scramble, add an extra sprinkling of chilli

Warm up your tacos either in the oven or a pan for a minute or so

Now it’s time to create your tacos, starting with some rocket for the base followed by the chickpeas, egg, avocado slices and top with the pickled red onion. Enjoy!
