Raspberry Oat Bars

Give these glorious Raspberry Oat Bars a go! So simple, so yummy, great adventure snacks or to have when serving friends tea and coffee at home. It’s only 8 ingredients for the whole bar, you have to try it out.

The Recipe

Ingredients

Base:
75g of butter
75g of brown sugar or maple
1 egg yolk
200g of oats
1 tsp of vanilla extract

Raspberry jam:
200g of raspberries
3 tbsp of Chia seeds
1 tbsp of maple syrup

Topping:
100g of oats
2 tbsp of brown or coconut sugar

Directions

Place the base in the food processor and process for 30 seconds.

Preheat the oven to 170 C. Place the base in a greased small loaf tin. Bake for 15 mins.

While cooking blend the jam. Mix the topping together. Once 15 mins is up add the jam layer then the topping.

Bake again for 5 mins. Leave to cool and cut into bars.
