Banana Rice Paper Rolls

Stop what you’re doing right now - if you’ve only got five minutes and want something sweet, you have got to try these SUPER simple, totally delicious banana rice paper rolls! I saw this recipe on @londonbruncher and few other foodie accounts and had to recreate!
I don’t know about you but I am always looking for new & interesting ways to incorporate fruits and veggies into my life and this one has been such a delicious game changers. You can pair it with some greek yoghurt to pack a protein punch, or, with coconut ice cream as a delicious desert.

The Recipe
Ingredients
4 rice paper rolls
1 banana
1 tsp of cinnamon
2 tbsp of maple syrup
coconut oil or butter
Directions
Slice the banana in half down the middle then half each half lengthways.
Wet the rice paper roll for 30 seconds in some water. Pop the rice paper onto a chopping board flat. Pop the banana inthe middle and add 1/4 of the cinnamon sugar. Wrap the left and right side of the rice paper over the banana then from the bottom wrap the rice paper over then banana and roll upwards. Repeat with the 3 remaining rice papers.
Heat a pan to a medium heat with a tbsp of oil/butter fry the rice paper for 2 mins each side then dig in, serve with yogurt.
