Sweet Potato & Lentil Kale Salad

As the weather gets sunnier I can’t get enough of this Sweet Potato & Lentil Kale Salad with a creamy tahini dressing. This bowl is the perfect, satisfying spring salad full of vibrant colours and flavours. The tahini dressing couldn’t be easier to make and makes anything taste amazing!
The Recipe
Ingredients
40g of kale, finely chopped
100g of cooked brown lentils
100g of pomegranates
1 sweet potato
1 tbsp of olive oil
sea salt
Dressing:
2 tbsp of tahini
2 tbsp of water
1/2 lemon juice
1 tsp of grated ginger
1 crushed garlic clove
1 tsp of tamari
Directions
Preheat the oven to 200C.
Cut the sweet potato into cubes, dress with olive oil, season and roast for 35 mins until cooked through.
Mix the dressing ingredients together
Mix half the dressing with the kale massaging it in for a few minutes
Mix in the rest of the ingredients and remaining dressing
