Roasted Chickpea, Leek & Fennel Salad

Looking for a quick and simple recipe that’s packed with flavour and full of zing? Look no further as this delicious chickpea salad is just what you need.

Combine roasted chickpeas with caramelised leeks, crunchy veggies and my miso dressing for the easiest no fuss lunch or dinner, that comes together in minutes.

Recipe -

Ingredients:

Salad:
* 1/2 jar of chickpeas
* 1 fennel
* 2 leeks
* 3 - 4 carrots
* A handful of seeds

Miso Dressing:
* 1 tsp of miso
* 1 tsp of garlic
* 1 tsp of ginger
* 1 tsp of brown rice vinegar
* 2 tbsp of olive oil

Directions

* Pop the chickpeas  and leeks  on a tray, add a drizzle of oil and roast for 15 mins.
* Whilst they’re roasting, put your seeds in a pan on a low heat to toast
* Next, chop and peel your carrots, and slice your fennel using a mandolin
* Mix together all of the dressing ingredients
* Plate up and drizzle over the dressing, along with the toasted seeds and a sprinkle of a herb of your choice.
