Recipe -
Ingredients:
Salmon burger:
* 1 tsp harissa
* Salt and pepper
* 1 Salmon fillet, skinless
* 1 spring onion
* 1 tbsp of flour
* 1 sweet potato roasted
* 2 tbsp sesame seeds
* 2 BFree Tiger Rolls
Slaw:
* 1/8 red cabbage shaved
* 1/2 fennel, tubular slices
* 1 carrot, julienned
* 1 tbsp of apple cider vinegar
* 1 tsp mustard
* 1 tsp fennel seeds
* 2 tbsp of olive oil
* Salt and pepper to taste
Directions
*In a food processor mix the burger ingredients apart from the sesame seeds together. Roll into two patties and coat in sesame seeds. Fry in a pan of oil and fry each side for 3 minutes until cooked through.
*To make the slaw whisk the dressing together with the fennels seeds, then add the veggies and mix well.
*Toast the bread in a pan or toaster, then add a little harissa to the bottom, top with slaw, the salmon burger, and then the yogurt.
*Dig in and enjoy!
