One Pan Cod Provencal

If you’re looking for a simple one pan meal full of amazing nutrition that tastes amazing you have to try this One Pan Cod Provencal. If fish isn’t your thing you could totally mix up the proteins or add in a tin of chickpeas instead to keep it plant based.
The Recipe
Ingredients
Tin of tomatoes
4 x cod fillets
1 tbsp olive oil
1 red pepper
1 bulb fennel
100g cherry tomatoes
1 red onion
3 cloves garlic
1 tsp smoked paprika
1 tsp rosemary
1TSP oregano
Directions
Fry onion for a few minutes in olive oil
Add garlic herbs and spices and cook until fragrant
Add in the vegetables and cook for a few minutes
Pour in the chopped tomatoes followed by a tin full of water
Simmer for 30 minutes
Place the cod fillets in the sauce and cover to cook for 10 minutes
Optional: sprinkle chilli flakes on top and serve
