Sweet & Sour Tofu

This Sweet & Sour Asian dish is great for when you’re feeling a bit meeeh and all you want is fast food. A fab healthier version, made from scratch and served along side some steamed greens. If you have some fresh pineapple lying about, pop some of this on top too! Enjoy.

The Recipe

Ingredients

1 pack of tofu
100g basmati rice

Dressing:
2 tbsp of sesame oil
2 tbsp of maple syrup
2 tbsp of rice vinegar
1 tbsp of sesame seeds
1 tbsp of tomato concentrate
1 tbsp of tamari or soy

Sides – steamed veggies and pineapple (optional)

Directions

Slice the tofu into cm slithers. Place on a chopping board and place a heavy object like a marble chopping board on top. This will help squeeze out the moisture.

Rinse the rice and cook as per pack instruction.

Whisk the dressing together.

Cut the tofu into cm cubes. Fry for 5 mins in a frying pan with 1 tbsp of sesame oil.

Pour over dressing and cook for 10 mins. Serve on top of rice with some veg
