Slow Cooked Beef and Carrot Stew

This slow cooked beef and carrot stew is so tender and delicious as it has had time to soaks up all the flavours and really infuse the meat.

Beef works really well for slow cooked stew dishes and it has a melt in the mouth texture that is bursting with flavour.

This makes a super delicious winter warmer or a great main at a dinner party.

The Recipe

Ingredients

500g of stewing beef

1 tsp of smoked paprika

4 garlic cloves

1 bay leaf

500g of carrots, chopped into inch cubes

4 shallots, chopped in half

3 tbsp of tomato puree

500ml of beef stock or chicken

2 sprigs of thyme

1 tsp of salt

4 pepper corns

Serve with boiled potatoes or rice and a green salad

Directions

Season the beef with salt and pepper, place everything into the slow cooker mix well and place on low for 6 hours until the beef melts way with a fork.

Serve with boiled potatoes or rice and a green salad.
