Herby Fish Pancakes

These Herby Fish Parcels are the perfect simple family meal. I love cooking fish this way, it’s so easy but always tastes amazing. Prep for this recipe takes just a few minutes but delivers such a delicious result. If cod isn’t your thing you could definitely swap for a different fish or try out different herbs and flavourings.
The Recipe
Ingredients
6 savoy cabbage leaves
2 fillets of cod
2 tbsp olive oil + extra to drizzle
4 garlic cloves
salt and pepper
1 lemon
2 tbsp of chopped parsley
2 tbsp of chopped rosemary
2 tbsp of chopped dill
250g of new potatoes
Directions
Bring a pot of water to boil and add the potatoes to boil until cooked through
Preheat oven to 200c
Place the cabbage leaves on parchment paper and place the fish on top
Season the fish with salt and pepper, half the garlic, lemon slices then wrap with cabbage and baking paper
Bake the fish parcels for 20 minutes until cooked through
Chop the herbs and remaining garlic together with 2 tbsp of olive oil and salt, mix with the new potatoes and serve alongside the fish
