Fish Curry with Cucumber Ribbons

Now it’s getting colder a curry feels like the perfect thing to whip up on a chilly night. Trust me when I say that this curry is oh-so easy to make and uses cupboard staples! I just love that gorgeous colour to brighten up those dark evenings – and the cucumber ribbons make it super light and fresh. I hope you enjoy beautiful!

The Recipe

Ingredients

2 cod or salmon fillets (or the type of fish)

2 crushed garlic cloves

1 tsp of coconut oil or butter

1 tablespoon of grated ginger

1/2 red chilli de-seeded

1 tbsp of red curry paste

1/2 tsp of turmeric

1 can of coconut milk

100g of baby corn

100g of sliced mushrooms

1 red pepper, thinly sliced

1 cucumber, ribboned

1 tbsp of sesame seeds

1/2 lime

tamari or soy sauce

Directions

Firstly season the fish with a little salt and leave to the side

Place the oil in a pot and bring to a medium heat, then add the garlic, ginger, curry paste and stir for 30 seconds then pour in the coconut milk and add in the turmeric, cook for a few minutes stirring.

Then place in the fish, baby corn, mushrooms, pepper, 1 tsp of tamari or soy sauce and cook for 10 minutes until everything is cooked through

To ribbon the cucumber just use a peeler and stroke down the cucumber lengthways to create ribbons. Its hard to do the whole one so be careful on your fingers.

Plate the cucumber ribbons and serve with the curry to the side.

Top with sesame seeds, fresh lime juice and some tamari.
