Coconut Fish Curry

This simple and delicious Coconut Fish Curry is the perfect vibrant meal to get your week started. This fragrant sauce tastes amazing with fish but would also work with chicken, tofu or veggies to suit whatever you fancy although soft flaky poached fish is my current fave. I hope you love making this one.

The Recipe

Ingredients

1 tbsp of yellow mustard seed
1 tsp of chilli flakes
1 tbsp of cardamom pods
1 tsp of cumin
1 tsp of turmeric
1 onion finely chopped
2 tbsp of ghee or oil
1 can of coconut milk
2 fillets of white fish skinless
150g of cherry tomatoes
Salt and pepper
1 lime

Directions

In a hot pan, dry fry the spices for a minutes

Add the oil, onion and garlic and fry for a further few minutes.

Add the coconut milk and simmer for 5 minutes

Place the fish and tomatoes in the sauce and cook for 7 minutes until cooked through

serve with fresh lime, salt and pepper.
