Chicken Tikka Masala

Get ready to embark on a flavour-packed adventure with my homemade Chicken Tikka Masala recipe! This dish is a culinary celebration that fuses bold spices with the cozy charm of a homemade meal. Succulent chicken pieces marinated in a mixture of aromatic spices, grilled to perfection, and then bathed in a velvety, creamy tomato sauce. It’s a dance of smoky tandoor goodness and rich curry indulgence.
Recipe -
Ingredients:
*500g of boneless skinless chicken breasts
*masala paste
*250g plain yoghurt
*2 tablespoons oil
*500g of passata
*1 can of coconut milk
*2 tsp of salt
*fresh coriander
Turmeric Rice
*1 cup of rice
*2 cups of water
*1 tsp of turmeric
*salt and pepper
Masala Paste:
*2 onions
*5 cloves garlic
*1 thumb of fresh ginger
*3 tablespoons garam masala
*1 tbsp of chilli powder
*1 tbsp of cumin
*1 tbsp of turmeric
*1/2 teaspoon ground cloves
*2 tsp of sea salt
*1/2 fresh red chilli
*juice of one lemon
Directions
*First step - Soak the rice in water.
*Blend the masala paste together until smooth. Marinate the chicken in 3 tbsp of the paste. Do this for a minimum for 30 minutes, but ideally overnight.
*Heat the oil in a frying pan and fry the chicken each side until golden for a few mins then pop to the side. Add the rest of the masala paste and fry for a minute then add the chicken, yogurt, 1-2 tsp of salt, coconut milk and passata. Simmer for 30 mins.
*Drain the rice and rinse well. Pop in a pot with 2 cups of water bring to the boil and add the salt and turmeric.
*Pop down to the lowest heat with the lid on a cook for 10 mins, then turn off the heat and leave to cook for another 5-10 mins until the curry is ready.
*Serve together with fresh coriander leaves and yoghurt.
