Halloumi, Quinoa & Broccoli Salad

The most flavourful, delicious salad that is perfect for this gorgeous summery weather. When I’m building a salad I love to add lots of colour. From the vibrant pop of the pomegranate to the deep green of the rocket, this is sure to be a winner the next time you’re hosting.

The Recipe

Ingredients

1/2 pack of halloumi, cubed

100g of quinoa, cooked

1/2 head of broccoli

50g of pomegranate seeds

30g of rocket leaves

20g of pumpkin seeds

lemon dressing

1 lemon juiced

3 tbsp of olive oil

1 tsp of dijon

1 pinch of salt

Directions

Preheat the oven to 200c.

Pop the broccoli and halloumi on a tray add a drizzle of oil and roast for 15 mins.

Cook the quinoa as per pack instructions.

Whisk the dressing together.

Wash the rocket then toss with the quinoa, halloumi, broccoli, pomegranate, and pumpkin seeds, and top with the dressing.
