Hey guys, this week in the festive spirit of Halloween I’ve created some spooky cookies for you all to make! They’re much better than all that sugary, chocolatey rubbish that you buy from the supermarket and are super fun to get the kids involved with healthy cooking!

75g Coconut Oil
100g Coconut Sugar
1 tsp Baking Powder
1 tsp Cinnamon
Dark chocolate (melted)
Preheat oven to 180c
Put the oats in a blender and whizz until it is a flour-like consistency. Remove from the blender and place in a bowl to the side. Mix the baking powder into the oat flour so it’s evenly distributed.
In the same blender bowl (don’t worry about cleaning it up) cream together the coconut oil and coconut sugar by blending together. Crack an egg into the mixture and blend again until smooth.
Now add the dry mixture to the wet mixture and blend together. Once blended add in the cinnamon and blend again.
Roll out the mixture on baking paper, or pat down with your hand. Once it’s flat, pop in the fridge to harden for 30 minutes. Then, use your cutters to cut out cookie shapes. Put these onto baking paper and bake in the oven for 8-10 minute or until golden.
Take them out of the oven and leave to cool then decorate and dig in!
When they come out of the oven they might be a bit mishapen as the mixture melts so if this happens just stamp over them again with the cookie cutter while they’re still hot.
