2 tbsp Coconut Oil
4 Large Sweet Potatoes
4 Garlic Cloves
3 tbsp Red Thai Curry Paste
1 tsp Coriander
2 tsp Cumin Salt
4 Cups of Chicken Stock
1 Can of Coconut Milk
Fresh Coriander to Serve
Pumpkin Seeds to Serve
STEP 1: SWEET POTATO
Peel and roughly chop the sweet potato into inch cubes.
STEP 2: COMBINE ALL INGREDIENTS
Heat the coconut oil on a medium heat. Finely dice the onion and pop into the pan with a pinch of salt, cook for 5 minutes then add in the sweet potato, garlic, curry paste, coriander and cumin, stir for 5 minutes so everything is evenly coated. Pour in the stock, coconut milk a pinch of salt and some fresh pepper. Bring to a boil then reduce to a simmer for 25 minutes until cooked through.
STEP 3: BLEND
Blend with a hand blender then throw in the zest and juice of the lime.
STEP 4: FINISH AND SERVE
Finely chop the coriander and serve the soup with a scatter of coriander and pumpkin seeds on top.
