I hope you guys love my raw quinoa flapjacks. They are perfect for a 4pm pick me up and are completely sugar free, getting their sweetness naturally from honey. They are also packed with oats, seeds, and quinoa flakes which will leave you feeling full of energy!

300 g Quinoa
100 g Pitted Dates
100 g Honey
2 tbsp Coconut Oil
1 tbsp Cinnamon
50 g Raisins
100 g Pecans
100 g Pumpkin Seeds
50 g Sunflower Seeds
Pinch of Sea Salt
STEP 1: BLEND INGREDIENTS
In your food processor, blend the dates, cinnamon, honey and coconut oil. You want for it to blend into a paste. Add a touch of water to thin it out if it gets lumpy.
STEP 2: MIX QUINOA FLAKES
Next, in a bowl place the quinoa flakes, raisins, nuts, seeds and salt and mix together.
STEP 3: POUR IN DATE SYRUP
Pour the date syrup into this mix and massage with your hands to get the mixture covered in the sticky goodness.
STEP 4: ASSEMBLE, FREEZE AND EAT
Line a baking tray with coconut oil and spoon the mixture into it. Pop it in the freezer for an hour, then slice it into 2cm by 4cm rectangles, then place into the fridge until you are ready to eat them.
