Healthy Christmas Gingerbread Cookies and Dairy-free Hot Chocolate

This recipe is PERFECT for Christmas. Full of Christmas spices these gingerbread cookies are so delicious and you can enjoy them guilt free.

The flour mix is made from oats, coconut and buckwheat flour making this cookie totally gluten free. The sweetness comes from the coconut syrup but you can use honey or maple syrup. Teamed with my healthy hot chocolate you will feeling very smug this christmas with these two recipes up your sleeves.


Gingerbread Cookie

150g of oats
40g of desiccated coconut
60g of buckwheat flour
2 tsp of ginger
3/4 tsp of cinnamon
3 tbsp of cold coconut oil
4 tbsp of coconut syrup
1 tsp of vanilla extract
1 pinch of salt

1. Preheat the oven to 160 C.
2. Blend the dry ingredients in the food processor, then add in the wet and mix.
3. Roll out between two baking sheets and with a cookie cutter cut out the shapes.
4. Place in the oven for 20 minutes until crisp.


Healthy Hot Chocolate

250 ml of almond milk
1 tbsp of raw cacao
1 tsp of cinnamon
1 tbsp of coconut sugar
1 pinch of salt

1. Mix all together in a pot, bring it almost to the boil and enjoy.
