Whole Roasted Cauliflower with Spiced Aubergine Hummus

This Whole Roasted Cauliflower with Spiced Aubergine Hummus is a deceptively simple showstopper for anyone’s christmas table and is a great way to introduce new flavours and ingredients into the christmas meal. Directions

preheat the oven to 180C

Pierce the aubergine with a fork and place in the oven for 45 minutes

chop the chilli, ginger and garlic, add to a bowl with the dry spices, 1 tbsp olive oil and yogurt, combine into a paste

rub the paste onto the cauliflower and place on a tray with chopped red onion, and the whole garlic head (cut in half) and roast for 45 – 75 minutes depending on the size of the cauliflower

scoop the flesh out of the now cooked aubergine, blend the aubergine with chickpeas, roasted garlic, lemon juice and any of the remaining spiced yogurt paste

spread the dip onto the plate, place cauliflower on top, sprinkle pomegranate seeds and parsley on top
