This Veggie Fried Rice is such a staple in my house and is the perfect meal for clearing out veggies that have seen better days or for using up the freezer stock before the next shop. I’ve kept my seasonings pretty simple but you could add in some kimchi for a tangy spicy kick or some red curry paste and a little coconut milk for a thai inspired plate, the best thing about fried rice is that it’s the perfect blank canvas for whatever you love.
2 tbsp sesame oil
2 spring onions, finely chopped
50g of peas
50g of sweetcorn
1 red chilli
1 tbsp of tamari
2 crushed garlic cloves
1 tbsp of grated ginger
in a large pan add the sesame oil, garlic, chilli, ginger, leeks and spring onions and fry for a few mins
While the aromatics are cooking, shred the carrots into julienne strips and add them into the pan.
Pop the cooked rice, tamari, peas and sweetcorn in the pan with the remaining ingredients and stir to coat
Finish with a squeeze of lime juice and top with a fried egg and some sesame seeds
