When I was planning to make this Vegan Sweet Potato Cheesy Pasta, I really was not expecting it to be as good as it was. It was everything you want from a yummy, pasta dish and it took no time at all! A creamy, salty and cheesy heaven, made with all nutrient rich ingredients. I hope you love it beautiful.
100g of pasta
1 sweet potato
2 tbsp if olive oil
2 tbsp of vegan parmesan – I love Happy Cheeze
2 tbsp of nutritional yeast
1/2 tsp of dried sage
1 crushed garlic clove
Salt and pepper
Chop up the sweet potato into cubes.
Boil the pasta as per instruction with the sweet potato cubes. Then drain them both.
Next, blend the sweet potato with the rest of the ingredients.
Season and serve with salad. Always good to get some extra green goodness in there
