I’m trying to eat more plant-based foods, and my Vegan Mac N Cheese is a fun, easy alternative to the traditional dish. OK, there’s no actual cheese because this recipe is 100% vegan – do one, dairy! My secret ingredient is cashew butter. Lashings and lashings of it! Cashew butter is the perfect partner to macaroni and adds a portion of protein too.
I love this as a side with my Courgette, Peas and Pesto Bowl, or I think it works brilliantly as a main with a zingy green slad. Vegan Mac N Cheese delicious warm from the oven but it’s also fabulous in tomorrow’s lunch box. Enjoy!
Cook the pasta as per instructions.
Heat the oil in a pan and sauté the garlic for a few minutes until golden.
In a bowl stir the cashew butter, cashew milk and a big pinch of salt. When the garlic is cooked, stir it in too with the oil.
Place the pasta in a baking tray, cover in the cashew cheese, stir in the nutritional yeast, the chives, the flaked almonds, an extra drizzle of olive oil, plus another big pinch of salt, grill for 7 minutes, then serve!
