I love popcorn, it is such a tasty snack, but most popcorn is covered in sugar and preservatives. However, my vanilla and coconut popcorn recipe will get you popping in your kitchen and hosting movie nights all year round.
Cooking in coconut oil gives it a subtle coconut taste which works so well. Coconut oil is great to use for cooking as it has a high smoking point so it doesn’t get denatured by heat like vegetable oils.
The popcorn lasts a few days and is a great afternoon snack. When buying popping corn make sure you go organic as corn can be genetically modified.
Good For Movie night
Heat the oil, vanilla and and corn on a medium to high heat.
Once it start popping, leave it a few seconds then take it off the heat until everything is popped, make sure it isn’t burning on the bottom.
Open up the lid and sprinkle over the salt, shake the pot well and serve.
