Soup season is back! There is nothing better than a delicious bowl of hot soup on a cold evening, there is also nothing better than a fresh homemade veggie soup. So easy and so healthy just put all of the ingredients in a tray roast them and blend them and dig that bread in!

1 onion sliced
1 whole garlic bulb
300g of cherry tomatoes
2 tbsp of olive oil
salt and pepper
1 tsp of thyme
1 tsp of chilli flakes
400 ml of warmed veg stock
Preheat the oven to 180C.
Slice the onion and half the garlic bulb and put in a baking tray with the tomatoes.
Cover with olive oil and season and roast in the oven for 40 minutes.
Pour into a blender with the stock and serve with fresh bread, yoghurt and herbs.
