This Tomato, Chickpea and Cod Stew is not to be missed.
One pot cooking has got to be my favourite kind of cooking, especially when your pot is packed full of delicious ingredients like fresh tomatoes, olives and chickpeas to make the most beautiful and vibrant cod stew with very little effort or more importantly, washing up!
4 medium tomatoes, quartered
1 tbsp fish sauce
1 tsp of smoked paprika
2 garlic cloves, sliced
1 tbsp olive oil
1/2 jar olives
2 cod fillets
450ml of stock
1 can of chickpeas rinsed
To a heavy-bottomed pan on a medium heat add the olive oil and garlic and fry for a minute.
Next, add the tomatoes and cook for a few mins then add the chickpeas, smoked paprika, and olives, stir well then add the stock.
Simmer for 10 mins then add the cod, cover the pan and cook for a further 10 minutes.
Plate the stew and sprinkle with fresh black pepper and some greens.
