If you’re looking for some delicious lunch inspiration this Teriyaki Aubergine can be on the plate in 20 minutes. If you’re missing any ingredients there are loads of swaps you can make to adapt the sauce and you could also use a mix of vegetables you have instead of aubergine.
Mix the dressing together. cut the aubergine into inch cubes. Mix with the dressing then pop in a frying pan and fry for 20 minutes until cooked through.
