I absolutely love an omlette, but what not many people realise is that they can be a sweet and savoury dish! My sweet apple omlette is a quick and healthy protein packed breakfast, with a hint of cinnamon which will help to regulate your blood sugar levels and boost your metabolism.
You can enjoy this light breakfast all year round – love to tuck into this straight after a workout.

Good For Brunch
Thinly slice the apple, removing the core.
Heat half the oil in a small omelette pan. Throw in the apple and cinnamon and cook for 3-5 mins until the apple is cooked through. Place this in a bowl, to the side
Heat the rest of the oil in the same pan, making sure it’s evenly covered, leave the pan on a medium heat to heat up. Whisk the eggs with the honey, vanilla and a pinch of cinnamon. When the pan is hot throw in the egg mix and let it cook for a minute until brown on the bottom. Add the cooked apple mixture, fold in half and then cook for another 30 seconds until the egg is cooked then place on a plate to serve.
So there you have it, my Sweet Apple Omlette! Top with yoghurt, berries, seeds and cinnamon.
