This summer strawberry and cauliflower salad is the dream. It’s so perfect for a summers day lunch, and is super easy to prepare.
Everyone associates strawberries with summer, and we get some of the best strawberries here in the UK. I love adding them to salads for a bit of sweetness, not to mention they are a fully bonafide superfood. Full of nutrients and antioxidants, strawberries are known to have anti-ageing properties and are great for healthy eyes and a happy heart!
The cauliflower adds a bit of crunch to this salad, and the zest of the orange makes the perfect dressing – also adding that extra bit of Vitamin C!

Serves 2
Ready in 50 minutes
Preheat the oven to 200 C.
Roughly chop up the cauliflower. Rub in the coconut oil, a big pinch of sea salt, orange zest and half of the orange juice.
Roast for 40 minutes until cooked through and slightly golden.
To make the dressing, mix the rest of the orange juice with olive oil, salt and pepper.
Finely chop the mint and cut the strawberries in half.
Peel the mandarin and place with the strawberries, mint, cauliflower. Dress with the orange dressing.
