I really do love a raw Summer Slaw. The summer is here and it’s time for more fresh raw veggies. I don’t often feel like salads in winter, but when the sun comes out it really hits the spot. This summer slaw has a lighter refreshing dressing to the usual creamy one but tastes just as delicious, perfectly complementing the crunchy veg.
1/4 red cabbage sliced
2 large carrots julienned
150g of radishes sliced
2 tbsp of cider vinegar
2 tbsp of olive oil
1 tbsp of grainy mustard
big pinch of salt
2 tbsp of chopped up herbs – dill, parsley, mint
Grate all of the vegetables and add to a large mixing bowl.
Separately make the dressing and stir well.
Pour the dressing over the slaw and mix well again.
