I love making a big batch of this before the week starts so I’m prepped for breakfasts over the following days.
For me, it’s so important to keep my blood sugar levels balanced, so having this ready to add to a bowl with some coconut yoghurt and berries is super convenient.
I like that it’s not as sweet as traditional granola as the recipe calls for Stevia instead of sugar, however, you could always add a drizzle of maple syrup or honey if that’s your thing
Packed full of protein & healthy fats, this is sure to prevent that 11 am slump.
Ready in 40 minutes
5 tbsp of melted coconut oil
1 tsp of vanilla extract
2 tsp of cinnamon
1/2 tsp of salt
20 drop of stevia or 4 tbsp of maple
100g of oats
50g of almonds
30g of coconut flakes
50g of pumpkin seeds
50g of sunflower seeds
50g of ground almonds
First, preheat the oven to 175C.
Next, mix the melted oil, vanilla, cinnamon, salt and stevia together. Then, add the rest of the ingredients and stir and bake in the oven for 10-15 mins, at which point, pull the granola out of the oven, toss lightly, before baking for another 10 mins until golden brown.
