I just know you’re going to love my strawberry tart, you won’t be able to resist just having one slice! There’s something about the crunchy base mixed with the fresh yoghurt and strawberry topping that is just too irresistible. You can’t have a British summer without some strawberries and my tart is the best way to celebrate.
Preheat the oven to 180°C.
Grease a 23cm pie tin. Mix the crust ingredients together in a food processor. Press the crust in the tin, prick the bottom with a fork and bake for 20 minute until golden. Remove and allow to cool.
Mix the yogurt, vanilla and honey together. Spoon inside then top with the strawberries, mint leaves and a sprinkle of coconut flakes.
