Strawberry and Almond Paleo Muffins

I love a muffin. It’s the perfect thing to have on a summers afternoon with a cup of tea. My Strawberry and Almond Paleo Muffins are rather unusual as there is no butter insight, making them light and tasty.

They are protein packed thanks to the eggs and almonds and boost you with antioxidants from the strawberries. Of course you can mix them up with other berries but since summer is pretty much here, we may as well make the most of the seasonal produce!

I always make these for the girls and find them a perfect one to have around for a summer lunch.

Preheat oven to 180° C

Mix the almonds, salt and baking soda together in a bowl.

In another bowl, mix all the coconut milk, eggs, honey and vanilla.

Combine together and fold in the berries.

Pour the mixture into muffin paper holders, but only fill them 2/3 full as they will rise.

Bake for 20 minutes, you want them to be golden on top.
