90g chickpea flour
40g of spinach leaves
130ml of oat milk or other milk
Blend everything together until smooth.
Heat a pan with some olive oil.
Wait until the pan is hot then pour over the mixture so it coats the pan and forms a circle. Fry for a few minutes on each side until golden and bubbling.
Serve with whatever you like, hummus and falafels, pesto and avocado.
