A nut roast is not just for vegetarians. This Christmas classic is a nutritious plant based meal which can provide a tasty abundance of essential minerals and nutrients. So let’s ignore the cliches and dig in!
I have chosen cashew nuts for my take on this turkey alternative. Cashews are great as they have a lower fat content than most other nuts whilst still feeding your body with a great dose of bone friendly calcium and magnesium. Paired with iron rich spinach, this nut roast will leave you fighting fit to tackle these chilly winter winds.
This dish is a great vegetarian Christmas option. However, for you lovely vegans, please feel free to substitute the egg for my chia seed alternative.
