These Spiced Chickpea Tacos are the perfect meal to share with friends and family. Everyone can make their own exactly as they like and with chickpeas as the main protein source these are vegan friendly too. Colourful fresh flavours like this are exactly what I crave all summer long. It’s such a fun way to eat as a group and a great way to get your kids involved in choosing what they want to eat. Ready in 50 minutes
8 small tortillas
1 large sweet potato
1 tbsp olive oil
1 tsp smoked paprika
50g radishes
100g cherry tomatoes
50g rocket
1/2 red onion
for the chickpeas:
1 can of chickpeas
1 tbsp olive oil
1tsp cumin
1 tsp oregano
1/2 tsp smoked paprika
2 crushed garlic cloves
Avocado Cashew Cream
1tsp cashew butter
1 avocado
100g yogurt (I used coconut)
1/2 lime juiced
salt and pepper to taste
1 garlic clove
