Craving a dinner that’s full of amazing flavours? Try my soba noodles with lime and miso dressing for a super quick and delicious meal. It’s one of my go-to dinners when I’m not sure what to cook after a busy day in the office, but always have the ingredients in my fridge and cupboards. If I’ve made a little too much, I’ll pop it into some tupperware and take it to work for lunch the next day!
Wash the noodles in warm water, then place in boiling water and a pinch of salt for 8-10 mins or as per pack instructions, then remove from the pan and rinse in cold water removing all starch.
Mix with the red pepper, cucumber, avocado and carrot. Mix the dressing together, mix through then top with black sesame seeds.
