This Shredded Brussel, Clementine & Walnut Salad is the perfect vibrant addition to your Christmas feast. As much as I love all things roast dinners there’s something magic about a zingy, crunchy salad to go with that adds a whole new dimension to a meal. This is a super simple one to make and the shredded sprouts stay crispy so it also tastes great for a packed lunch the next day.

330g pack brussel sprouts, shredded (if you have a food processor this helps speed up the process)
2 clementines, peeled and sliced into segments
seeds of 1/2 a pomegranate
a handful of walnuts ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp olive oil
juice of 1 lemon
1 tbsp maple syrup
1 tsp wholegrain mustard
seasoning to taste
Finely slice the sprouts using a knife, food processor or mandolin
combine the dressing ingredients and set aside
In a warm pan toast the walnuts for a few minutes
Add the shredded sprouts, pomegranate seeds, orange and walnuts to a bowl
pour over the dressing and toss to combine
