Brussels Sprouts – you either love them or hate them. This time of year sprouts make me feel very seasonal and festive so I’ve created a delicious shaved Brussels Sprouts, Pomegranate and Maple Toasted Pecan salad as an alternative for your Christmas spread.
Sprouts don’t just have to be boiled, steamed or fried. You can also eat them raw with a delicious dressing if you shave them! My food processor has this amazing slicing attachment which makes it so quick and easy to cut up.

Good For Christmas
First, shave the Brussels sprouts. I like to do this in my food processor with the grating attachment. You can also do this by hand but it will take a long time.
Juice half the grapefruit and mix with the olive oil, 1 tsp of maple syrup, mustard, a pinch of salt and freshly ground pepper. Mix this dressing with the Brussel sprouts and massage it so the sprouts start to wilt.
Place the pecans in a pan with 4 tsp of maple syrup and a pinch of salt, stir well and toast in the pan for 3 minutes until golden. Leave to the side to cool.
Remove the seeds from the pomegranates and mix with the sprouts, top with the cooled pecans and serve.
