I love a simple traybake recipe and this one is oozing with fresh Mediterranean flavours.
You only need 4 ingredients for this one all complementing one another with their different textures. Make sure you get the potatoes extra crunchy! Any type of fresh filleted fish will work perfectly for this recipe.
It’s the perfect recipe for stress-free entertaining with of course limited washing up!
150g of new potatoes
2 tbsp of olive oil
Salt and pepper
2 seabass fillets
Preheat the oven to 200C.
Half the potatoes and slice up the fennel into cm thin slices and put them in a roasting tray.
Season with the zest of 1 lemon then chop up the lemon into 8ths and add it in. Drizzle over olive oil and salt & pepper then toss together.
Roast in the oven for 1 hour.
Once the potatoes are golden add the sea bass and season with lemon zest, salt and pepper.
Cook for another 5 minutes then pour over some lemon juice and serve.
