This Salmon & Watercress Salad is my go to lunch recipe at the moment, it’s so quick to throw together, and is full of healthy fats, omega 3s and protein to keep me going till dinner.
I’m definitely favouring quick and simple lunches at the moment as my working day is much shorter with Shay around and something like this simple salad which is ready in 15 minutes gives me a little bit more time take a moment to enjoy my plate and take a proper break.
50g of watercress
2 salmon fillets
salt and pepper
1 tbsp of olive oil
1 tbsp of pomegranate molasses
2 tbsp of pumpkin seeds
Preheat the oven to 200C
Season the salmon and bake for 10 mins
Place the watercress on a plate and add seeds, cooked salmon, olive oil and drizzle with molasses
