I’m loving this Roasted Veg Pasta recipe for a simple and quick work from home lunch, this recipe serves 1 but double up if like you love leftovers in your lunchbox.

Ready in 20 minutes
Good For Lunch, Picnic, Student friendly
1 courgette
200g cherry tomatoes
1 tbsp olive oil
1 tsp harissa
1 tsp capers
Zest of 1/4 lemon
Seasoning to taste
60g penne (I used brown rice)
Preheat the oven to 200c
Slice the courgette and roast with the tomatoes for 15 minutes, turning halfway
Cook the pasta according to pack instructions
Stir the remaining ingredients into the pasta and serve
